About Rodízio

Come experience the Tradition of Brazilian Churrasco

At Novilhos Brazilian Steakhouse, we bring the authentic tradition of Brazilian churrasco to Bellevue, Washington. Rooted in the culinary traditions of Southern Brazil, churrasco is a style of Brazilian barbecue where premium cuts of meat are slowly roasted over an open flame or wood-charcoal grill to create rich, distinctive flavor.

Rodízio is a traditional Brazilian dining experience. In Brazilian tradition, a rodízio is an all-you-can-eat style of restaurant where customers pay a fixed price, and waiters bring 17 unlimited freshly grilled meats to the table several times throughout the meal, with sides offered buffet-style. A churrascaria is a Brazilian steakhouse serving food in the rodízio fashion, where servers come to the table with knives and a cut of roasted meat on a skewer, and cuts slices of meat fresh for you.

Novilhos Brazilian Steakhouse carries on the rodízio tradition, where our gauchos offer unparalleled service while delivering remarkable cuts of meat to go with over sixty salads and Brazilian side bites available at our Fresh Market table.

At Novilhos, our gauchos and carvers serve a variety of fire-roasted cuts tableside, allowing you to enjoy each selection freshly sliced and prepared to your preference. Our menu features an extensive selection of beef, lamb, chicken, pork, and sausage.

About Churrasco

The Brazilian “churrasco” has been a tradition for generations in Southern Brazil, where gauchos (Brazilian cowboys) pierced large pieces of meat and slowly grilled them over open-flamed pits. The churrasco tradition has continued in our modern kitchen since 2010.

With a fixed price (rodízio) and this unique style of barbecue, Novilhos (no-veel-yos) features a continuous service of sixteen selections of beef, chicken, pork, lamb, and sausage, all slowly spin-roasted, preserving their natural flavors and textures.
